Raspberry Marshmallows with no added sugar!

Light, airy, and naturally flavorful - this modern take on marshmallows is made without added sugar or egg whites. The raspberry concentrate gives both a vibrant taste and a beautiful natural color. And of course, with only a few ingredients and no added sugar!

 

Ingredients (15-20 marshmallows):

200 ml water
3 tbsp raspberry concentrate (or more, to taste)
15–20 g gelatin


Instructions:

1. Bloom the gelatin in a small amount of water.

2. In a saucepan, heat the water and add the raspberry concentrate (about 3 tablespoons, or more to taste).

3. Add the bloomed gelatin and stir until fully dissolved (do not boil).

4. Let the mixture cool slightly until warm, not hot.

5. Using a mixer, whip the mixture until it becomes lighter in color, thicker, and airy.

6. Transfer the mixture into a piping bag and pipe marshmallows onto baking paper.

7. Let them set at room temperature or in the fridge until fully firm.
